I see that you can size the first five fields in the view search results, but is there a way to modify either the css or an internal value to increase the width of the input text boxes on the view data itself?
I see this in the code and wonder ??? cf_size_full_width

It's even easier than that! Just go to the fields tab instead of the views tab, then edit the particular field you want to change. A window will pop up and then select the "textbox settings" tab. There are all sorts of cool settings to play around with in there including the field size, max text length, comments, highlight, etc.
