Is there a way for me to add some of the TinyMCE functions that are available? Looking at their website, it looks like there are a lot more buttons that could be useful to me, but aren't even on the "expert" selection of our installation.

How hard would it be for me to customize that?

Pretty hard, I'm afraid. :-(

I wrote a Custom Fields module way back when that allowed for customization of the content, but never released it (it requires HUGE amounts of doc & I'm not 100% happy with aspects of it). Right now it would take a lot of manual editing of the database...
