The code that generates the list of available dates to search by is smart (hah!) in that it figures out the total range of dates available for submissions in your form View and shows the appropriate search options.
It looks like something wonky may be going on... however, just to make sure: log out then log in and try again. I think the information is stored in sessions because it takes time to compute. Perhaps the sessions are being dumped...?

Thanks for the input, have tried logging in and out of the client account concerned.
My Order of process is that I create a new view (from the Template 'All Submissions') , then edit the view to set permissions on what can be viewed / sorted / searched / edited etc. Upon doing that is refrains the client from searching by date range. Even though the tick box for the 'Date' field is true.
