Thanks for the post! And sorry I didn't respond sooner - I've been away the past week and I'm just playing catch-up!
2000 submissions a day should be perfectly fine - no problem at all, even if it's a very large form. In terms of the incoming volume, quite honestly, you should be fine with 10's or 100's of thousands a day. Mostly it's just a question of how many are coming in at once, which will load down the server at that particular time.
I once did a site using an old version of FT, where we had about 800 submissions coming in over a 10-20 minute period and there were no problems at all. The server wasn't particularly fast, either (in fact, it was quite slow!), so I really wouldn't worry.
The biggest problem will be the interface: exporting the data, especially. That'll take time, and may well result in time-outs if you're trying to export thousands and thousands of records.
