Sure! You get complete control over the markup & how it's arranged, so you could certainly do that. That said, the table would only ever have one row: columns and then fields. You couldn't have multiple fields of the same type in the same column. What I mean is that the form page wouldn't ever have a "true" table, where the user could enter 10 submissions in one go.
