I'm afraid not, the "to" field is always visible by any email client - that's actually not a restriction with Swift Mailer, it's just the way emails work.
What you can do instead is assign all the email recipient as "bcc" (blind carbon copy), and add a default email recipient - say, yourself. Then, everyone will still receive the email, but no-one can see the other recipients on the list.
